A historical debt in rural Mexican communities with high socio-economic needs is to improve the economy of their micro and small agro-industrial units, as a key factor for achieving a better quality of life for families. This chapter describes an interdisciplinary and intersectoral model to contribute to the sustainable development of communities dedicated to sugarcane cultivation and the artisanal production of raw sugar cane ("piloncillo"). Importantly, the main technological, social, economic, environmental, and energy-related elements that must be considered when defining a sustainable development strategy for these communities are identified and validated. Likewise, the working team’s proposal to achieve 'Artisanal Piloncillo Production with a Sustainable Approach' in Tének piloncillo-producing communities located in the geographic center of Mexico is documented. In particular, the challenges, strategies, actions, progress, and favorable impacts achieved by applying the model in the field are described. Notably, the sustainable operation of the Tének micro and small piloncillo production units will materialize as the community members organize themselves to formalize legal entities through which they can market their products in national and international markets. The research and intervention model proposed to trigger the sustainable development of micro and small production units looks very promising and will be validated in other rural production systems in areas of high socio-economic marginalization. | |
